We have been to Mexico 3 times (twice to the same resort) and Cuba once or twice over the years.
The 2 times in Mexico were at
Grand Sirenis and once at
Hyatt Ziva Riviera Cancun (This year in May)
With your 3 kids, I would recommend the Grand Sirenis.
Lots of pools to choose from and has a great vibe. The resort is big enough that you can go for a walk around the resort and it will be like going exploring on a hike, without the tiredness. Lots of wild animals on the resort as well (iguana, birds, monkeys, agouti, coati, and a snake sitting on the stairs on you way up to your room

)
5 a la carte restaurants to choose from (you can book 3, book the Brazilian
quick) and several buffet style restaurants throughout the day, ice cream shop and a awesome coffee place.
There are activates everyday organized by the entertainment staff. I think they even have a babysitting club.
Cool thing is that, due to the size of the resort, they drive golf carts everywhere and you can get a ride whenever you want. Order one from your room to take you to dinner or grab one on the way back. We did this several times as my kids were young when we visited and there was still a time different between home and Mexico. They were out and ready for bed by 6 pm.
Lastly, they now have a dolphinarium on the resort. It is separate company and you need to pay but at least you do not have to leave the resort if you want to swim with dolphins.
Oh.... one negative .... They beach isn't the nicest. Not your typical Caribbean beach. Our kids were young and didn't care for the beach at the time so that was a non issue. But if you like long walks on the beach than this may not be it........ Need to outweigh pros vs cons.
We almost went back to this resort this past May, but I really didn't think we should be going to the same resort for the 3rd time. But maybe we should have.
Hyatt Ziva Riviera Cancun was not bad but I feel we could have enjoyed Grand Sirenis more. Hyatt was small and nice and quiet. We arrived on Tuesday and for 2-3 days we felt like there was more staff than tourists. Service was great but the week we were there, they did not have buffet style dinners. This was our second option as we were supposed to go to one of the Barcelo resorts near by (which are also highly recommended ) but we canceled that as the West Jet strike was coming and we didn't want to risk it.
There are 3-4 Barcelo resorts also within this same area. All on one property. We have never been, but our friends have been several times and they say they are great, especially with kids.
Your kids are probably too young for full day excursions but I highly recommend
Xelha. Natural lagoon water park. I liked it and my kids loved it.
