Just to confirm: you had a foreign license and they're giving you credit for it?

If so, that's not a loophole, that's specifically allowed by the MTO.

Not in my case, there's no License Exchange with my license. I have to get a whole bunch of documents and approved by MTO, hence the "impossible" and might take a few months. Hopefully less than 12.

Maybe you should just explain your situation so that people are not commenting on speculation.

Some letters I need to get translated and submitted, some government approvals, etc.

Per the link I posted earlier, if we do not have a licence exchange treat with the country in question, if he can get a letter from the foreign licensor that shows he has equivalent driving experience, he wi ll get credit for that from the MTO. Far from impossible. Although probably not worth the time and expense to shave off a few months if that is all he is being credited.

Also with M2 only it seems a lot of companies restrict what you can ride at demo days -- I wanted to take out a CBR600RRA, and Honda's policy was full M only.

You went to the wrong demo day I guess, I only have my M2 but Honda let me ride the CBR600RR and Yamaha let me ride the R6. (I could have tried the GSXR600 or 750 too, but they were booked solid at their demo day)
