Try the Ledbetters sausages, same company that does the coyboy steak things - they sell them in link as well as patty format at Giant Tiger. The sausages are freakin delish, and it's a Canadian company.
As for Giant Tiger being a "small town" store, there's literally one in North Oshawa as well as downtown Ajax/Whitby.

Bottom is a "Fattie" - weaved bacon, layer of ground chuck, filled with onions, peppers, pepperoni, and mozza, smoked low and slow for a few hours. Lots of different recipes - some people use jalapenos and different cheeses, some people put sausage inside....whatever floats your boat. Comes out looking like this.
Somebody I know (fellow ADV enthusiast, senior instructor at RideSafe school) went to Carnivore diet - lost ton of weight (like half lol) and looks so healthy and 10 years younger. Meat FTW!

My kid was Type One and when on keto he looked fantastic....buttered black coffee tho ....shudder.
We eat mostly vegetarian but I crave burgers and most any meat. I'll have a meat lovers pizza tonight and bring lots of it home.
Ozempic is keeping my weight and blood sugar down. Takes away the cravings ( to a point ) and no low blood sugar headaches..
Partner and I both really turned into being protein hounds - she's doing shakes - I do one small shake a day, lots of fake meat, need to be careful with too many eggs.
Cheese is an easy go to for protein as is tuna. I'll add a small can of tuna to mac n cheese.
Biggest difference with Ozempic - I can skip a meal as I did today - was just not hungry and very quick limit to satiation ....just want less food. I like to snack but very quickly just stop munching instead of finishing off a bag of chips.
Down nearly 60 lb and it's good. √
I have niece that was thinking of going vegan but realized it meant no bacon. Now she's hooked on poutine. Fortunately she's in her early 20's and burns it off. The flavour of poutine is OK but afterwards I felt like I had swallowed a cannonball.

I too love meat and have way too many meat makers.
I started with a Vision komodo type grille (like a Green Egg only better), very nice 15 years ago but outdated. I don't think I've used it for 5 years.
For smoking I use a PitBoss 7 - it's awesome. 6 levels, each will hold a full brisket. Tons of vertical for hanging for links and quartered poultry. A hopper of pellets goes 24 hours.
I just picked up a like-new Pitboss Memphis off a friend who found it too hard to use. They don't make them anymore, but it's a natural gas on one side, charcoal on the other, and has a wood smoker oven below. The smoker ducts up through the gas side BBQ so you can use it as a cold smoker too.
At my place up north, I have a Trager - it's lousy as smoker but a great BBQ.

Bacon was slightly harder to give up for me and I still love the smell. Seafood was the hardest because I loved shrimp and fish. But all of it was really easy to stop considering I had also just stopped smoking cigarettes after 18 years - that was hard for a while!
I’ll still eat meat or seafood if I was travelling and it was a locally raised and humanely killed thing, like in many parts of the world. I would never again have the mass produced crap that is passed off as meat which I used to eat.
