I was going to build a full blown smoke house in the back yard, just hope the neighbours don't get pizzzzzed off

yeah they're varying sizes. I experimented with some different sized casings this year so we'll see how they turn out.

It's a storage container, sorry I misremembered and called it a shipping container.
Ok , so in the spring somebody needs to take the lead and organize a picnic , say maybe Marie Curtis park in Longbranch? where we could grill souvlaki and pass around sausage, I bake an adequet focaccia bread. A ride in picnic...... bring your own Imodium.
I've done a summer sausage that sounds easier to make than yours , but that Kulen would be interesting. Best of luck

Looks about the same size as a stand up freezer
Little taller but similar yeah.
The temp and the humidity have to correct.
You want them to dry.
My aunt in Italy doesn't have a cellar.
She hangs them outside, and covers them at night.
I'm still learning about how to cure them.
I have the biggest cantina (cold cellar), so when my dad stops, I'm next to start doing it.
