Home made beef jerky. YUM!

Take 2: Deer Meat. Very lean. Let's try this again. Not going to marinate nearly as long. Only 4 hours.

i cant eat deer meat, taste weird to me, i dunno why cant do it. Im sure you will enjoy it

So how did the latest iteration with the venison turn out?

Venison was good.

Then I did a nice beef one. Absolutely perfect. Same or better than any store bought jerky I ever had. I can't stop eating this stuff!

The beef one that turned out really good I put this:

Soy Sauce
Brown Sugar
Fance Chipotle Sauce my gf bought me
Piri Piri hot sauce
Garlic Hoisin Sauce

Marinated for 12-13 hours. Dried for about 7 hours.

Absolutely amazing. It wasn't all dried out like my first attempt. Very chewy, very good flavour. I am very pleased with the product.
 
OK since my last one went so well I gave it another shot (actually my GF bought a 4.0lb roast and told me make it). So since you guys gave words of encouragement I made a little picture tutorial/adventure for you ahaha:

First you start with your 4.0lb roast that your nice GF got for you because it was on sale (I think she paid $12)

Then you cut all the fat off because the fat won't let your jerky keep for a long time.

Then you cut the jerky into about 1/4" thick slices. Mine never really turn out 1/4" usually a little thicker

Then you cut those slices into strips, however skinny or wide you want them. I was in a rush so I have all sorts of shapes and sizes.

Then you put your meat in a ziplock bag and start pouring marinade in, in my case I used some steak marinade, soy sauce, brown sugar, hoisin sauce, sweet thai chilli sauce, and siracha hot sauce (gives it a nice bit of kick).

Once you thoroughly mix up all the sauces together and get them all over the meat you get all the air out of the bags and then wrap them up like so. Then place in refridgerator. I let mine marinade for about 24h this time

Then when you are rushing in the morning to make breakfast you remember that you don't want them to marinade too much longer so you start throwing them on your dehydrator.

You throw the lid on the dehydrator and leave for work!

When you come back from work they kind of look like poo. However they taste extremely delicious. You sample one, and then you pat yourself on the back.

You let them completely cool down and then pack them into a huge *** ziplock bag. You then go stand on a scale with and without the ziplock bag and you find out that your 4lb roast reduced into 1.8lbs (28.8oz) of Jerky. If you do the math store bought is 39.99 for 8 X3.25OZ that's $44 worth of store bought jerky for about $15 made at home. BTW I am using pricing directly from Jacklinks website. Which is the jerky that I buy. And to be honest I think home made jerky is every bit as good.

I make mine in the oven.

I found if you use liquid smoke in the marinade it gives it a more authentic flavor.

I think your math is a little off though.
Liquid smoke is good but it's damn strong haha. Plus the steak marinade I used already has some smoke flavouring in it.

What's off about the math?
 
I've been to a couple different walmarts and they say they don't sell a food dehydrator and I can't seem to find it in the store. Might just have to pay more at CT.

I got mine from the walmart in Milton. Also a bunch of people were selling them brand new on Kijiji if you are alright with buying that way...
 
I see you fixed it before I hit post.

I can see the pics a bit better now cause I was posting from my phone before. The dehydrator way looks a lot easier than the way I do it in the oven. Not to mention it saves on energy. I guess I'll be picking one up.

I was going to try the oven method, but I figured the dehydrator would pay for itself in energy savings. And I am certain it has already since yesterday I left it on for 11hrs. Would hate to think what my oven would cost me to do that LOL.

Your oven would have finished the job significantly faster, but it's harder on quality control.
 
well I got one from kijiji last night ($25), but it didn't come with a manual. found one in a different language this morning and had google translate it.
 
My first try turned out OK. Taste is good, but I dried it for too long. The thicker pieces are good but the thinner ones are crunchy.

Good thing I only did half the roast.
 
Just started makin jerky this year. Partly because I enjoy cooking & preparing food, but mostly to offest the cost of super expensive jack links. I found a recipe on the internet somewhere, and ill post it up when I find it. I dried the strips in my oven at 160. Usually takes 8-12 hours depending on the thickness I cant keep this stuff past 2-3 days its so popular with everyone.
