Home made beef jerky. YUM!

I cut up 2.2 lbs (1kg) of boneless steak that I had in the freezer for a while into 1/4" strips

These are what I am using to marinade. Soy sauce, chinese bbq sauce, siracha hot sauce, worchestshire sauce, liquid smoke. Not picture but included is garlic powder, onion powder, chilli powder and fresh ground black pepper.

Strips placed in ziplock bags with as much air taken out as possible. Going to let it marinade for about 18 hours.

Has anyone ever made their own at home? This is my first time.
 
Nope, but I was planning on it. Looking forward to reading up on the results. Sure beats paying $5 per bag :cool:

Love home made jerky!!! My dad makes it once a month and I always go over and steal a bag! My dad bought his dehydrator at bass pro shop for like $30-40 has worked great for about two years now.
 
I've always wanted to try using Alton Brown's way, using furnace filters and a box fan. From the show that he did about it, the idea is not to heat up the meat, but just to move the air by it to take the moisture out.

I'm very interested to see how this method works though.
 
I have a dehydrator - works great.
@ the 1st pic. You need to get rid of as much of that fat as you can. It goes funky quick, unlike the meat which will last for a couple weeks.

And I have spices from just about every corner of the world. Because I love having foods from different cultures/countries on a regular basis.

same price range. But seems to have gotten a poor review. I suspect for my simple, non-commercial needs it would be fine.

I am debating on just buying a dehydrator because I plan on making more if it's good. Especially since store jerky is DAMN expensive. It's roughly 10X more than making it at home lol.

Total cost of ingredients:
$6.66 for 1kg of meat. (you can get cheaper, I actually used AA steak)
$1 Soy Sauce
$1 Worchestshire
$1 Hot sauce
$1 Smoke

In reality the 1 dollar items are actually more like 50 cents worth, but just for demonstration purposes/conservativity. It costs me $10/KG for this jerky before cooking. I suspect it will be more like 0.6KG after dehydration. Not including the electricity bill of course. Store bought is about $10/.250KG. So it's about half the cost of store bought. If I get the right cuts of meat I can certainly bring the price down. And quality will actually be better since I will get a big *** lean roast when they go on sale like $2/lb or less.

Also going to look into making pepperettes. I love that stuff. My GF keeps buying me turkey pepperettes cuz it helps me stay faithful to my cutting diet.

That crap isn't good for you either. I bit into some jerky once and I got a mouth full of formaldehyde or something....I don't know what it was but it tasted like death. That put me off jerky for a while.

Home made jerky is an awesome idea. I have no goddamn idea why this didn't occur to me before I saw this thread LOL.
 
Hey I may have to try this if yours turns out!!!!!! I love jerky but the sodium content is brutal, mYBE HOMEMADE WOULD BE LESS SALTY?
 
Thanks for the BP link. I'll see if I can swing by there tomorrow and pick one up. Btw, Freestyle, if you come across my wife, run and hide.. She hates the smell of jerky :shock:
