I do it 'cause going to Oakville from Peterborough and back multiple times gets boring. Heck, sometimes I go so far as to rest my elbow on my knee and then my chin on my hand while sitting slightly sideways on the seat.
Its probably because sport bikes and their riders know they look sort of ridiculous when theyre stopped at a red light in full race gear. They need to be either at a timmies or on a freeway doing 200 kph or dragging knees so that they can maintain the image. Obviously im talking out of my ***.
And from my experience it is illegal to ride with on hand in Alberta. I can scan the my friend's ticket he got last week. Idiot thought it was funny to wave to a speed trap. Wasn't even speeding, cops pulls him over and gives him a ticket for riding with on hand, missing front reflectors, missing rear reflectors, obstructed plates, and two more stupid tickets I don't remember.
I see it all the time, but I could never understand it. Even on my CBR for a couple of hours in traffic or on highway I don't feel any fatigue keeping my hands on the handlebars.
Keeping one hand away from the handlebar just seems dangerous as it really inflates your reaction time... Why do people do it?
uhh are you serious? maybe you're short and dont get back pains. I can't speak for others but my lower back gets sore from hunching over for long periods of time or wrists get sore too. By taking one hand off the steering, it allows me to sit more upright. Then when you're more of an upright position, your free hand will either rest o your thigh or your tank.

The cop was just on a powertrip and wanted to give your friend a lesson for being too cocky by the sounds of it. What if your friend needed to signal a right hand turn?
At highway speeds the only thing my hand needs to do to keep the bike stable is hold the throttle. It goes dead straight. **** faster I go the more stable the bike is. After 4 hours on the hwy, when I pull into a 50 zone, feels like the bike wants to fall over lol

Do you drive the car with your hands at 10 and 2 o'clock at all times? Or do you wind your window down/up, change radio stations, adjust your vehicles HVAC, eat or drink, or are one of those drivers who thinks they have to keep looking at their passengers while they drive as they talk to them?
If you do even one of those things even once then get off your soapbox.
