Today is celeriac remoulade that I’ll have with a turkey burger and some salad. When I worked in France the works canteen had all these whacky salads and things to try that I’d never had before, one of them was celeriac remoulade which is cheap to prepare and delicious as a cold salad, kind of like a twist on coleslaw. Grated celeriac root with a lemon juice, mustard and mayo sauce. Really good and celeriac root is cheap to buy.
 
Tried smoking a whole duck today on my Weber smoker. Turned out very well. 5 1/2 lb duck cooked at 300F for 2 hrs. Pulled it at 150F and wrapped for 15 mins to rest. Made a nice raspberry sauce last night to plate the duck with. The bonus is I now have about a cup or so of rendered duck fat that I'll use for either fried potato wedges or French Fries 😍

After 2 hours at 300F:

+1 on the duck fat for fries.The fat has to be straight from the roast. The filtered and rendered stuff from the grocery store doesn't do it.
 
Most of the time I think the GTA is a largish place worth avoiding but I am jealous of your food choices at time. I’ve been eating salsas and food from Med Mexican for the past little while and it’s excellent. They use authentic ingredients and different hot peppers for maximum flavour. Really good stuff.

At $6.99/lb for AAA, it was a no-brainer to take the whole prime rib - over 18 lbs! Almost 11 hours at 170F to reach 140, then reverse seared for 10 minutes at 550. I usually stop at 125, but tried to make my in-laws happy(er). Still pink in the middle and soft as butter to carve.

No sure how healthy everything will be but should be fun trying

Well it turned out to be defective....the control panel buttons don't work I couldn't turn it off.... so back it goes.
Final tip off for 2021... ghessh.
 
Update: So the Air Fryer was replaced, and the new one was defective as well, so it now is going to be returned and refunded.

The problems I experience were with the control panel, it basically didn't work. I had to fight with the buttons to do simple adjustments (they were not really buttons it's a flat screen kinda control panel you tap). Plus after it went through the cooking cycle it never gave you the option to turn it off (the option never re lit back up to tap). I had to pull the plug. This was on both. Also it reeked of plastic and chemicals. I only got as far as the intial setup on both with no food, I can't imagine cooking food with that odur. It's too bad it looked like quite the device and the Instant Pot has been rock solid appliance.

At this point I most likely will get a less expensive toast oven/air fryer and a cast iron pan.
 
funny , my appliance guy when i was asking about air fryers said , isnt that oven we installed in your kitchen convection? yes says me. Thats an air fryer essentially says him . idiot...

Home made Sweet and Sour chicken over rice. Mmmmmm....
 
Paella tonight , scallops shrimp chicken sausage sundried tomato black olives . We were pretty low on saffron so could have been better , but close enough .
On weekends we to national dinners , find a wine to go along or beers . Tonite was Spain . France last week , looking at Sweden or Denmark next .
