Instant pot Caribbean chicken roti with chopped fresh cilantro added. Even the roti (shells) are scratch made and cooked.

It's been too long since I made this, one of my most favourite meals

Simple dinner tonight:
Baked BBQ chicken leg quarters, potatoes and tomato/ cuke/ onion salad.
Serving 1 of 2 that I had.

Bought the Grace Jerk Marinade. Leg quarters are on for $1.99/lb so for ~$20 we can eat for 2 days.
Will be my first time trying to make my own jerk.

BBQ season is coming
try this stuff with chicken
cut chicken in half, press flat, put on top rack
shake this stuff on each side, slow heat
turn regularly until you get your 180 internal temp
doesn't need anything else, and don't buy the MSG free one
best BBQ chicken you'll taste

 
Roasted chicken legs with a side of mixed veggies stir-fryed in oyster sauce.

What veggies with the oyster sauce? Would like to try that.

Grilled on the Weber Summit with cherry wood, apple wood and a bit of hickory. I used a liberal amount of a scratch beef dry rub and I decided to add BBQ sauce to half of the rack at the end (using national BBQ competition award winning Misty Mountain sauce). Prep included removing the inside membrane and salting the meat lightly ~12 hours before grilling (i.e., the night before). Served with fresh toasted garlic bread. The combo of dry and sauce ribs was excellent. Cheers.

neighborhood dogs are howling from the scent

chicken cut into eights, sprinkled liberally with that spice I showed prior
one grill removed from the Q, charcoal and smoking chips in it's place

around 2 hours at low temp and a beer or 3

In my ever expanding sphere of food/ingredients to keep on hand I recently went looking for premium Canadian maple syrup and picked this up.

The ingredient list on this bottle literally says: Pure organic maple syrup.... and that's it

. I don't use much maple syrup so this size suits me perfectly. The best before date code gives me ~ 2 years to enjoy this. I have a few recipes that maple syrup is a must for, plus the odd pancake/waffle/crepe/bacon-sandwich breakfast ;).

Maple syrup on porridge is awesome. Also Costo has the good stuff at $13 for a litre. Great value.

My younger guy loves his pancakes. I found the Costco Kirkland Signature to be the best value.

Maple syrup production in most of Canada is operated under a cartel. They set the prices and limit availability in some cases (they have huge holding/reserve tanks for the stuff) which is why outside of Costco and a few independent hold outs and also some US producers they are all pretty high. It’s one of the reasons I don’t buy it anywhere else now.

Here I baked some chicken breast slices and spicy Indian vindaloo sauce in the oven with a covered ceramic dish, and enjoyed it all in a fresh calabrese bun instead of rice for a change.

I thawed out some Instant pot bourbon baked beans from the freezer that I made earlier. The textures and depth of flavours in this dish blows away anything from a can.
