I have ridden many many, perhaps hundreds of bikes.
There are a few that stick out as really really fun to ride.

Top of the list goes to the good old.
RZ350
Then the list gets weird.
I would go with
Ducati 1200 Monster.
Ducati Super motard

And of course the RC51.

Looking at my list..........
I love twins I guess. Most inline 4's just don't do it for me. Nothing can beat the blast of a V-twin with the front wheel in the air.
 
5th gen VFR. Even though I sold my first one last year, had to pick up another a year later. Nice smooth powerband, all-day comfort, and really one of the sweetest sounding bikes around.

2 people have mentioned the Ducati Hypermotard. Mine as well. Had it since new back in August '07 and it still puts a wide grin on my face. Although my Husky comes in a close second.
 
My Hypermotard S model was a ton of fun while i had it.But as a fave ride i have to say it was my old 1979 Honda XL250S.That old sled did everything from six hour MX to tour Ontario.

Kawasaki ZX-11D or Triumph Daytona T595. The ZX is not that powerful by today's standards, but I will always remember it as feeling like riding a fighter jet. That sounds kinda lame maybe, heh. And the Daytona was just a monster. It got a lot of attention (from riders & non-riders), rode better the faster you rode it, and sounded incredible. (It was also built like crap, nostalgia hasn't glossed over that part yet)
 
I only ridden 4 bikes so far....

1. CBR125
2. Ninja300
3. CBR500
4. CBR600 F4i ( Around a parking lot!)

...And nothing can compare(so far)to the first time I went upto third gear on my CBR 125 on a parking lot at RTI!
 
My favourite bikes Ive ridden in order;

Aprilia RS250
Honda RVF400
Suzuki TL1000R (well sorted one)
 
Hmmmph - too hard...

Best all around Burgman 650 exec - from twisties to grocery shopping to traffic to cross country touring does it all in comfort, never breaks.

Prefer it over my ST1100

tho the 1100 is a rush.

Fav perhaps Honda 305 Hawk...first love n'all

Preferred it over the Yamaha 250 I got after it. Yamaha hit the pipe nicely tho.
But close second is the RD400...the reviews at the time called it "perfect". Many enjoyable rides - tho liked to foul the plugs.

Best offroad..Bultaco Sherpa 250 trials tho the little Honda and Yamaha 125 trialers hang in there. Not me but what trial riders aspired to...

I rode my friends RC30.
But it wasn't broken in yet.
But that was one sweet bike.
I wanted to take it for a spin after beak in, but he crashed it and wrote it off.
 
Blackbird for me and I compared it side by side with a hayabusa.

For twisties the NSR250.

For Urban and twisties also the CB-1400

For all around cross country bike the CBF1000.
