I found staying outside of towns along the highway is good. Less locals to go looking and most night travelers are truckers...
For what it's worth I've spent many nights on the road with bikes in an open trailer all across Canada in the last 4 months, never had a single issue.

Just a couple of summers ago, we trailered our bike and all our possessions in a U-Haul across the country, and stayed in many places all over the US and Canada with the bike on the back of the truck. Disc lock and chain through the frame to keep everyone honest. No issues.
Spent a few nights camping in the wild with the dirt bikes in the truck as well. No problems there.
