The CB500X is a lot like the VStrom 650 that I've owned for 15+ years now. Some days I wonder why I still own it. I've got other bikes in the stable like an XSR900 that are a lot more interesting and which are instantly thrilling to ride. In comparison, the VStrom really starts to shine after I've been in the saddle for an hour or more. The somewhat bland character doesn't grab your attention but you eventually notice that, unlike riding the more exciting bikes: your butt doesn't hurt, the tank is so big you won't have to think about finding a gas station for another two hours, the vibes are nice and mellow, you aren't watching out for cops behind every hedge, etc...
If you only do short rides then a characterful bike can be a good choice. But if you can swing it, a bland bike and a characterful bike compliment each other pretty well.
The VStrom is like the wife: the paint is a bit faded since you first met, weighs a bit too much, doesn't move very fast, but is very comfortable and easy to live with.
A characterful bike is like the mistress: fun, exciting, a little bit dangerous, but more expensive and maybe an hour is really all you want to spend with her. Might have an accent or a temper if she's one of those European models.
