im sure the guy is an idiot, but I suspect the cop tried to put himself in the path of the motorcycle to obstruct/overthrow the rider somehow and ended up getting brushed.

I'd be inclined to believe your version of events. Missing the mirror adds a wrinkle as it's clearly there in the pic. Again, given the desire to cry poor me and control the narrative, I think the odds are higher than the cop grabbed it and ripped it off than the rider hit the cop hard enough to break the mirror off.

Logo on jacket is pretty distinctive (looks like a seal although there are many potential things that it could be a seal for). It won't take long for them to figure out who this is. What guy wears green crop pants (especially to go riding)? That should also be a trigger for their friends/coworkers to know exactly who this is.

Can't be many of those bikes registered in the GTA in that colour and year. Shouldn't be difficult to narrow it down, then knock on some doors. My guess is that it's the one that just reported his bike stolen after convincing a friend to alibi him.

You assume it was registered in the riders name. That is a big assumption. If you aren't bothering with plates/insurance, you shouldn't transfer it to your name either.
