It's hard to earflap a brimmed hat, they typically earflaps fold outside. I've stitched them to fine-knit fabric that bridges the sweatband (attached above), that way they tuck into the crown when not being used.

Leather hats aren't really my thing, I've made a few -- can't stand the finicky stitching details.

I've made more than a few. I think that my record was something like 5 in 3 weeks. The stitching doesn't bother me, because all of the holes are prepunched.

My wife and MIL are phenomenal cooks…never been as fat as I am now

MIL is also a seamstress…but she refuses to make me a leather hat! She’s working on some Christmas ornaments made from wool / string or something instead.
