Just completed an off-road day in the bush with SMART Riding Adventures.
If you want to learn more about slow speed riding or handling your bike on the loose stuff, you will not be disappointed!
They are at located Horseshoe Valley Resort, just north of Barrie.
They provide all the gear, lunch is available for under $20 and have a fleet of Yamaha TTR 230's and BMW GS's (310, 700, 800 and 1200).
The instructors were awesome! Training included handling the bike on loose surfaces like sand and gravel, negotiating tight turns in the woods, climbing and descending steep hills, traversing deep ruts, and going over logs, rocks, etc.
I suggest driving your car there because I was exhausted at the end of the day and would not have enjoyed riding home.
