Thanks for all the advice, it’s a K only 20k it’s been rode a bit every year, owned for 32 years from a guy who owns lots of bikes and took all the steps to store every season, inside the tank is still shining
If this is a correct, low mileage bike, it's at peak value now - unmolested. Frame paint can be touched up. If there are scratches and dings in the tank paint, spend some and money on spot repairs. My guess is a good quality 1980 DOHC could fetch $2500, but that would be the upper end. I can't think of a way to improve an 80 CB750 to make it worth more.

Sometimes it's worth looking for a more desirable year, say a late SOHC, that needs a little work. Pick one up for $750-1000 then spend another $2K to restore or restomod -- then you might have something worth $5K.
 
Too easy; clean it up real nice, make everything work perfect and just ride it (y)

If you turn it into a brat bike (n) when you ride by, I will point and laugh.

If you turn it into a cafe racer :/ well most people don't even know what that really is, they make a bobber/chopper thing and call that a cafe racer.
If you are making a real cafe racer out of a CB750 SOHC your first purchase will be upgraded suspension and brakes, alloy rims, followed by flat bars and rear-sets, if your pistons and cylinders are in sad shape then you would be shopping for an 810cc over-bore kit or something similar :|

Powder paint on a CB750 frame? who is going to notice, the frame was cheaply built, heavy steel and ugly!
... does that have loose ball bearings in the steering head? <- Put taper bearing steering head bearing upgrade at the top of the wish list.
