Ducati uses L-twins for the same reasons that Triumph uses Triples...brand identity. The companies have millions of dollars invested into their respective R&D, and as we all know the motor is the heart and soul of a bike, so they stay with what works. It's the same reason that different car companies are know for their specific engines...BMW's I-6, Subie's H-4, Chevy's OHV V8's.
 
Depends which Ducati you're listening to. The new Monsters don't have the dry clutch anymore, they're phasing it out. A stock 696 is not going to sound very inspiring, just like any inline four. Factory exhausts choke out most of the exhaust note. To my, my 94 M900 sounds like a small block Chevy.
