You can choose avoid highways and toll roads on Google maps under their options tab...that's what I do, then I zoom in and change the route if I find a more interesting road...
Substitutes PA backroads in Allegheny State Forest in place of the lakeshore road south of Lake Erie and parallel to I90, stays closer to the Allegheny mountains in general, bypasses all big cities aside from Buffalo and Nashville itself. Adds 2 or 3 hours in theory but probably more in reality.
Brian's route going on to PA from Fort Erie is much better than the first route going through Ohio. I travel along that stretch of Ohio often and the roads are quite mild (very gentle bends and elevation change, not too scenic). Northern Ohio is a bit better than the flat farmland in the west along I75, but it's not a worthwhile road destination.
