Knives - What are you using in the kitchen??

The best method of sharpening is the one that you will use.

I randomly ran across this yesterday..... google listening in I guess...


I have a bunch of stones at home. I think I will give this a shot to see how it performs. 60 bucks CAD delivered... how can you go wrong?

Shockingly good price. Includes an angle guide too. I'd prefer a little larger but for the for price, I can't complain.

I have a coarse 10x4 DMT to start the process and a fine 6x2 DMT but it feels really small so I normally end up finishing with 7x2.5 stones.

It looks like sharpal also makes the 162N which is 8x3 for $90 CDN. I would go that way if you can afford to wait as it doesn't appear to be available now. 60% more surface area for 50% more money so it should last longer and it will definitely sharpen faster as more of the knife is being ground at once.

My new favourite knife store “SHARP” in Hamilton has a guy at the counter using 3 different japaneses water stones in a trough . Thoughtfully and reverently sluicing the knives back and forth , hand honing to 5000x grit . I can’t help but think the room behind him has a 10k German grinder and once your out of sight , Bzzzzzzzzzzz

My new favourite knife store “SHARP” in Hamilton has a guy at the counter using 3 different japaneses water stones in a trough . Thoughtfully and reverently sluicing the knives back and forth , hand honing to 5000x grit . I can’t help but think the room behind him has a 10k German grinder and once your out of sight , Bzzzzzzzzzzz

I've got a wet wheel that gets used if a huge correction is required. It's not German or worth 10k but I am not enough in love with the sharpening process to spend hours fixing an abused (or not properly prepared) edge.
 
I have one of those 12” x 3” whetstone slow grinders with the leather strop side wheel , I’ll clean up chisels and plane blades with it . The quality of the stone is classic Chinese.

I bought this diamond plate based on this Youtube review. Works flawlessly. I've struggled over the years trying to get a sharp edge on knives and woodworking tools using Japanese water stones and Arkansas oil stones but with no great success. Totally different experience with this product though. All my kitchen knives are now scary sharp. Highly recommend getting this beast from Amazon.

In my experience you need to ask yourself if you are a knife person or not.

If you are into knives and like sharpening and taking care of them, a nice higher end set is well worth the money. Like @Gary , I have a set of the Wusthof Classic knives.

I have had this set for over 20 years. My only gripe is that the pins that hold the scales on are aluminum and deteriorate over time. I have replaced the scales on a few of them with G10 and titanium pins. (I am a knife guy and run a machine shop.... lol)

If you are not a knife guy and just want a sharp knife, I have come to the conclusion that you should buy Ikea knives and a carbide sharpener. As soon as it gets a touch dull, two swipes on the carbide and its good to go. Something like this.

So now all the knife guys are screaming at their screens...... "No... that destroys the knife and puts a crappy edge on" This is all true. What matters more is that you have a sharp(ish) knife. Sharp knives are safe knives.

You will have to replace your most used knives every year or two, but they are from Ikea and cost like 20 bucks.

The amount of households that I have been in where they have really expensive knives, but when you go to use them, you can't cut butter is beyond count.

I just wanted to elaborate on the aluminum pins....... who the fk am I kidding.... I just want to show off the G10 scales I made....

I have a bunch of G10 kicking around at work so I made some scales and changed out to titanium pins.

I really like how they turned out. I need to get around to the rest of them.

I also have some Vespel SP-1 that I have been thinking about using for scales just because I have it. The scales being 10x's the price of the knife might be a bit much... lol
