I believe it was here on GTAM but I read a good tip.
Since riders are known to target fixate (bike goes where you look), always stare at the deer's tail.
That way if it decides to move it will be away from your current line.
I haven't had that extreme close encounter yet, but while riding I have seen a few in fields (alive) and ditches (destroyed).
