ever consider a triumph sprint ST/GT? always loved the vfr800 for the single sided swingarm and the utility and sportiness until i rode with a guy in a group and couldnt stop looking at his sprint. bought one now and its got everything i need, looks, utility, can 2 up no problem, etc etc. im considering doing east coast (again) with a more suitable machine and have no doubts itll be fine.

My wife rented a 1050 on one of our rides. Handles amazing as well.

yup heres mine in a full spec mid-life crisis accountant spec. not a bad angle on it imo, especially from the rear.

rereading OPs post i worry that the lean/bars might be a tad too aggressive but that bike ergo site from previous should settle the dust for you. its been a while since ive sat on a VFR so cant compare, sorry. you can of course also get risers which a lot of older folk do on the sprint.

I also had an 03 Yamaha FJR but sold it as I found it to be top heavy
It's been redesigned since 03, it might be worth test riding a newer one to see if it's any better. It's the most popular bike in my group of riding friends. I even know one guy who owns 2 of them.

ST is amazing, though used examples are often pricey even with high miles (not dissimilar to the VFR800, actually).

I haven't ridden the GT, but by all journalistic accounts Triumph totally ruined the bike when they made the change. Apparently the soft suspension and longer swingarm don't play well together, so the handling is borderline broken. Not sure if a shock swap would fix the problem, but the GT is one of the few relatively recent bikes made by a major manufacturer not associated with Erik Buell that I can remember getting absolutely slated in road tests...
 
If you like the VFR1200 then the 1200x or Crosstourer might be a better option. Same motor, retuned, reasonably good reviews.
