French Fries

[Relax]

NO MAYO on fries.
Only accepted condiments are salt and/or ketchup.

Don't even think about malt/vinegar.

Unless you are eating a poutine. In which case the only poutine that is acceptable is the an "original" without any additional crap in it.

No mayo for me either, but a nice aioli/chipotle can be good (yeah, I know, I hate ketchup too but love seafood sauce EDIT: not on my fries!).

I've made duck fat fries at home, and

Best thing ever. My daugther talks about them all the time but its time consuming to make and duck fat isn't exactly cheap.

It's a kind of process where you cut, blanche in vinegary solution, pat dry, do a first fry, pat dry and let cool down (ideally freeze them!), and fry a 2nd time

I also cook them in my wok...which means i have to do 2 batches and keep an eye on the temps

The Belgians invited fries and they eat them with mayo.
I’ve also had them at roadside stands in Belgium with curry ketchup. Highly recommend.

McDs now has BigMac sauce available as a dip.
