What are you looking to have done and do you have a budget in mind? I tried a decade ago to find someone that would recover the seat the way I wanted and eventually gave up and did it myself.
I wanted this:
Places I found didn't want to put the pattern in and wanted >$200 to make the cover. A few nights with a sewing machine and <$100 in supplies and I had the seat I wanted.

Last few times I recovered a seat...DIY. Still have a roll of the covering too.
https://edmotorcycleseats.ca/ I've known the owner of E.D. Motorcycle Seats for years. Builds aftermarket and can re-upholster any stock seat. Will custom make it to your desires. Great guy, lot's of fun and reasonable.

This guy builds custom bikes and he makes seats as well:
