49hp and 430lb.(claimed) just my opinion, but that is a recipe for very boring.
 
No question both those bikes are boring as, but also no question 49hp is plenty for a noob if not the top limit.

My 230+ pound son-in-law has a CBR500R as his second ride, it's plenty for him still after 5 years experience he still does not even want to try my MV Agusta yet, he's a smart lad.
 
I think that a CB500X isn't the bike of choice for this newbie. While it is a versatile bike, its ugly, its features may not be what the rider is looking for, seat height.

As the original recommendation was an SV650, we can assume offroad worthiness was not considered. The OPs sig is a cruiser, he's not going offroad on that. Op booked the M2 for the newbie, so riding together is probably in the cards. Current non-rider urban trend are naked/retro bikes.

To the OP. There's also the Z650, CB650F, MT07/XSR700 in this category. Depending on her comfort level, maybe the 650 class can be ok.

Outside pick, the Vulcan 650.

The Z650 in particular is very suitable for shorter folks. The seat is very narrow at the front which makes foot-down easier than the seat height alone might suggest. My 5'2" wife likes hers. It's not particularly better than the 500F or any of the other unfaired options at touring duties though.

I'd also suggest that if the planned touring consists of mostly weekend trips, that touring suitability isn't necessarily the most important criteria for a new rider. New riders aren't going to know what they're missing in that regard and will often be perfectly happy with whatever they've got. My wife took her CB300F (first bike) to Pennsylvania and back without complaints. We were doing 120 or 130 on the highway portions.
 
KTM 300cc 2-stroke outputs ~51 horsepower weights 220 something pounds and goes :oops: 120mph holy no wonder that thing felt so fast on the lake yesterday.
 
Hmmm... maybe the Rebel 500 might be more up her alley ? Just sayin'.
Similar to the F. Good at everything, awesome at nothing. Mind you my issue was possibly trying to ride it as a sportier ride instead of just enjoying/accepting it for what it actually is.
Functional, reliable and efficient.
 
The 3 CB500 models :sneaky: similar because all are based on the exact same motorcycle frame and motor.

@MacDoc been watching Itchy Boots since she started...she's gone through 2 RE Himalayans, the Honda CB500F and now she's in S. Africa on a CRF250...she's awesome!
 
Itchy boots is who I had in mind when I suggested the CB500x. It is comparatively heavy to other bikes, but not underpowered. There's also the KTM390 Duke, KTM390 Adventure - both capable of 170km/h, very lightweight and inexpensive.

How do you find the 390adv on the road? Typical single vibes or fairly smooth?

That's more hp than my KLR and I don't find it boring. My FZ6 had about 3 times the HP of the killer AND it was boring because you couldn't wick it up w/o the threat of the Man taking your license.

A KLR is about as boring as it gets on the open road, interesting only when it’s used on tough terrain. I swapped with a fellow I met when looping Superior, we were supposed to go for 5 miles then change back. The bastard ran almost 200 miles on my FJR, if he could have fuelled up and left before I got to the gas stop I’d have been behind him for another 300.
