Best Bumps To Catch Air Around The GTA?

Wouldn't that qualify as stunting?

1. Driving a motor vehicle in a manner that indicates an intention to lift some or all of its tires from the surface of the highway, including driving a motorcycle with only one wheel in contact with the ground, but not including the use of lift axles on commercial motor vehicles.
 
Forks of the Credit Road and Old Base Line in Caledon both have spots that you will catch air if going through fast enough... or too fast depending on how you look at it...
 
Northbound on Dufferin just before the Davenport intersection. The road is like a shallow ramp so you need some decent speed to get air.
 
It's not GTA, but since the OP likes going to the track, I would highly recommend New York Safety Track, turn 7 (aka "Wheelie Hill").

I lived for almost 20 years about 400 feet south of that intersection right on Dufferin; I can tell you from personal experience and many direct observations, there are A LOT of people that know precisely the right speed needed to get airborne.

Be careful you are almost totally blind to right turning traffic from westbound davenport as you are going up the hill.

I've seen guys almost clear the entire intersection; used to sit in front of the house with a couple of buddies in the summer late at night and as certain cars would fly by us, we'd take bets if they were going to get air, then wait to hear the engine redline and see the sparks fly.

I haven't been there in a while, but southbound Dufferin at Dundas used to be really good too. Managed to get air there many times in my cavalier; Dufferin is so bad south of there though that I would HIGHLY advise against it on a bike

Been daydreaming about NYST for a month since I discovered turn 7!!!!!!! I missed the chance to do "the mountain" back in the UK and have been kicking myself ever since!

NYST7 is my redemption!!!!!!!!!

I knew a spot like that on my morning commute in London, as one would come up the crest, one would first need to see if it were a red or green light at the intersection....decision time....chop or hammer.....then take your chances on the queue if that light had only recently turned green.

If you're heading south on the Bayview extension past the Brickworks, the first ramp that takes you East towards the DVP. Just as you finish the ramp and begin to straighten out, there's a nice hump in the road that always lifts my front wheel off even at very low speeds. Just make sure you're full straightened out!
