You should do a little research about all the current models from all the manufacturers, including Harley. You don't seem to know about Harley but still call it an upgrade. All new bikes will be an upgrade. A 900 Vulcan will be a big upgrade. New Harley's seem to be good bikes but certainly not any better than the other makes out there. If you are a long term owner the suggestion of a Roadliner S above is a good one. And if you are spending the cash don't forget about Victory and Indian (which is a terrific bike). And the Moto Guzzi California 1400 is a really good upgrade as well.
I think the demo truck just went thru the GTA. IMHO you must at least demo ride a few first. Saying you want a Harley is like saying you want a FORD or GM or HONDA. You will not believe the difference in the bikes even within the same models,softails, touring dynas etc. The demo's are run very well and very noobie friendly.
Really vague question, there are a lot of models that appeal to different tastes. Are you looking at new or used? Chrome or Blacked out? Long distance or around town? These are questions you'll be asked at the dealerships.
Chassis-wise compared to the V-Star I would say the Softail series like the Slim or S but you're looking at 1690cc vs 1100.
You can try asking this question on the HDForums, you'll find a better signal-to-noise ratio.
If you like the retro bagger look, try a Road King or a Softail Heritage Classic.
The Street Glide is maybe their best-selling bagger.
If you just want a big cruiser to bomb around on, the Fat Boy, the Fat Bob, and Softail Deuce all look like fun.
Personally, if I was shopping for a big U.S. bike, I'd check out the Victory Kingpin or Victory Cross Roads first.

Find proper dealership, put your *** to motorcycle seat, grub handlebar, put you legs into pegs and your body immediately send signal to you brain. Your soil analyze it and helps you to take a right decision. Here is the only way. Double check you filings with test drive (if possible).
My buddy went from the same bike as you to a Street Glide. He was very happy with it. He just got a deal on a Fat Bob, so the glide is for sale.
All 3 are very different bikes, so like others have said, you need to sit/ ride some.
