Tire choice - 1985 Yamaha FZ750

Rebuilding a 1985 Yamaha FZ750, and I will need new tires, I have narrowed it down to the following, and wouldn't mind some input on the choices available, pros and cons, recommendations, your own experience etc.....

If I missed a brand that is useable as well let me know....

the sizes I referenced are stock, I wouldn't mid going a bit fatter in the rear if possible, one set has a wider tire, and I am not sure if I can go any wider and still fit the rim and have clearance.

Pirelli – Sport Demon
Front - 120/80/16 – 99.95
Rear – 130/80/18 – could not find this at all in a Pirelli no matter what model
Why they don’t have a rear is beyond me……buggers….

I dunno if anyone makes a good 16" front radial for that bike, but Conti now has vintage radial rubber in 18" for the rear.
