Also i wonder how she shifts with no clutch? I suppose one could modify so that you clutch with left foot....

Comments state rider has two levers on one side. Sadly, it's also reported they died while riding.

Would you be thinking clutch with the heel and shift with the toe?

Of course you can, push-pull steering. When I'm riding more assertively, I'm pushing one bar and pulling the other.
