I've got my bike stripped down almost all the way necessary to do them, but I don't feel comfortable doing it on my own. Was wondering if there was anyone out there that could give me a hand in exchange for a hundred bucks or so. Would probably take only an hour or two given the state of the bike.

Get someone whos a mechanic to do this, not some random person off the internet.

For 100$ i can show you what NOT to do so that you won't die the next time you start her up and try to ride it...

I was considering dropping it off at a shop the way it is, I justthought there were guys who do work on bikes that post here. I also want to watch so I know what I'm doing next time.

I plan on keeping this bike till it dies, so that will probably mean at least one or two more valve adjustments in my future.
