Need advice

There is only one kit. I think the slip-on is a bigger factor than the K&N... but TBH, even if you had neither the GS500 would benefit from being rejetted. It comes from the factory jetted as SUPER lean, doesn't really like to run in cold weather. The settings that come with the kit instructions might be a little off, as they are based on an older style K&N filter, but even those settings will be better than stock. Some people who don't understand what Dynojet kits are will tell you to buy some bag of jets off some guy on some GS500 forums instead, feel free to do so but know that the fuel needle you get in the kit is completely different and superior

The Stage 1 kit (Parts Canada number 1007-0205) should be fine for you.
It's a good thing because as mentioned you get your hands on those nice aftermarket needles, adjustable w/ 5 grooves.
Follow their jetting instructions with their new needles and their probably one size bigger main jets.
You'll have further adjustability if you want to go richer, by raising the needles (lowering the retainer) another slot.
You can even go bigger main jets ie. if you were to go to individual filters. The different jets are all right there in the catalogue:

But the K&N inside the stock airbox is the best way to go IMO.

And remember: The main jet controls only 10/10ths throttle - 9/10ths and below is on the needle.

I thought I would have to get a stage 2 because of the mods ?
 
No, nope, nein, negative, nay, not, nyet, nuh uh
 
Fairly easy, if you look at the instructions I linked above it will give you an idea. Half of the work is just accessing the carbs, and on a GS500 there's not too much in the way. You'll be removing the fairing, the fuel tank and the airbox. Frankly the hardest part is removing the screws from the float bowls without stripping them
