Do any shops so that? What's the incentive for the shop? I could see maybe reducing the price substantially with returned shims, but straight trade seems like a poor business model.

CWW used to do it for a few bucks, not exactly a straight trade but close enough. I don't know if anybody does it anymore... but this is actually the perfect place for that kind of thing, OP. Start a new thread in the technical section with the diameter & thickness of the shims you have, and what you need, and someone around here will have 'em.
I should have probably said straight or partial trade. I think a lot of shops will do straight trade if they are getting the labour on the job. For a guy walking in with shims in hand - a partial trade would be a good way to get them to come back as a future customer. Thanks for the suggestion TwistedKestrel.
