Looking through my box of misc bike gear, I found my bullet camera setup that I'm no longer using. I got lots of excellent street and track footage with these. Years back, I organized a GTAM group buy of these cameras - these two for sale are the identical models.
These cameras get plugged into any recording device that accepts A/V in - a camcorder, a pocket digital recorder...anything with A/V in. I used a Canon MiniDV camcorder that I kept in my trunk.
