"Exotic" Meat Butchers in the GTA?

Alright, google is giving me mixed results so I ask you guys. Does anyone know of a specialty butcher? I'm looking for Alligator and Bison. I'd get the Bison myself but no time for hunting.

Not sure where you can get Bison but the Blue Sage use to serve alligator. The owner is crazy about BBQ and can talk your ear off about it. Give him a call or better yet drop in.

Bison burgers used to be fairly common at Loblaws but I haven't bothered looking for them recently. I've been told that the meat is drier than beef so steaks etc may be tough.
 
You can get Bison almost all the time at Whole Foods, along with other game ( wild boar, etc )
 
Check with the butcher at Medium Rare, I know they do bison and other game meats, but not sure on the alligator. Either way, great freakin' place.

The thing with Bison is that since it's game and not farm raised, how the animal dies tends to affect the meat. Bison steaks need to be prepared Rare and the meat should never be frozen for the best taste. It tastes a little bit "Gamey" if you overcook it, but otherwise it's a great meat. Higher in protein and much more lean than beef. I prefer peppercorn bison over most beef.

From what I've seen lately, bison is farm-raised, not wild. The issue with it being tough is that it needs to be cooked medium rare at the most, as it doesn't tend to be marbled like beef, so it doesn't moisten as it's cooked. I used to buy it at the farmer's market in Peterborough and I know there's a farm up there that raises them. I might make a nice run to go up and get some.
 
There are a couple of placed in st lawrence market that sell game meats like bison and other odd meats.

There's also a place on bayview between davisville and eglinton that sells meats like that. the name escapes be at the moment, but it's not cumbreas, and it's on the east side of the street. Across from McSorleys pub.

Wow, that's interesting. I remember when I was up north and had Elk the guy selling game said if we bite into his bullet/buckshot, we get half off next time :D
