Complicated test as it is grossly affected by geometry. Probably simpler to do straight pull out tests. You can then run the math to try to see if you are getting close to limits. I would not recommend supporting a TV on an extendable arm using drywall anchors. For a flush mount, TV's are light and it is hard to go wrong.Would love to see similar based on a cantilevered load instead of just a vertical load. Assuming an 80lb TV...how would that affect the ratings.

As far as the tests he did run, he was basically testing the compressive strength of the drywall with the vertical test. Bigger anchor engages more drywall to spread the load. If he'd tightened the toggle more so the wings dug into the back of the sheet, he would have had a vastly different result.
