Does tire change the geometry of the bike?

Please help me to figure out these questions.

Is going from 50 tire height to 55 change the bike geometry? Do I need to re-adjust the sag?
What effects will be on going from stock 50 to 55?

Yes

Whichever end you're changing, I assume the back, will be higher in ride-height. The profile of the tire may change as well, probably more triangular. This will speed up your steering, increasing the steering axis angle. The different profile will affect the cornering behaviour of your bike. If it's a rear as I suspect, I don't think the difference will be anything huge that you will notice.

My old Concours came from the previous owner with Goldwing touring tires on it.
They seemed very planted in the straights.

When they needed to be replaced I switched to sport touring tires and at first I couldn't believe how much faster the bike seemed to turn.
It did seem a little more squirrelly on straights and especially on stripped roads.
 
It will change your rake, trail, swing arm angle, and wheel base BUT not enough that you would notice.
