Thanks! Actually, after a few rides in Oct, when it was <10 degrees I decided to get heated grips and I totally agree, it's the difference between enjoying the ride and not so much ;). I had a similar experience with the tires too. Almost dropped it just leaving the house a couple of weeks...
Congrats on your Scrambler! I got mine in May (full throttle variant, first bike) and love it! If you commuted last week, then you have more cold weather experience with those tires than I do. I plan to commute with it today though. This temp is my lower threshold since I don't have heated...
Yeah, I go the opposite direction, against traffic from midtown (near Yonge & Eg) to Richmond Hill. 25km, not bad at all.

The OP does drive a manual car though, so I would assume he knows basics like dropping from 4th to 1st at 100kph is not a good idea. As well, probably basic gear/speed guidelines and powerband. But I could be wrong, sure...
I can tell my 'powerband' based on the throttle response in my right hand, which is my reference (not speed/gear). I may forget what gear I'm in, and not even know what exact speed I'm going, other than my relative speed to traffic. But I can tell in my right hand if I'm not getting enough...
Braking hard and fast will, as you noticed, cause the front to dive and destable the bike. Braking softer initially, then progressively harder may help your suspension cope easier. Practice in an empty parking lot. Maybe new tires?

Shift the weight to the back by sliding your butt to the back, chest to the tank. Ease off the rear brake when it loses grip, keep braking with the front.
Having been rear ended in a car more than once before, it's a big concern for me on my bike. My routine at a stop, is to stay in first and watch my mirror for cars coming up the rear until one stops behind me. Until then, I visualize possible exits in front of me, like evasive lane splitting...
