OP, submit for a court date. On the court date request, ensure that you check off that you wish to dispute the officers testimony.
If the cop doesn't show you will most likely get off.
Hmmm... be prepared to not get any sympathy at court OP.

Chances are unlikely, because it shouldn't impede traffic. But OP should try it before going to court.

Submit for a court date, show up, give your sob story, prosecutor may reduce the fine, give you more time to pay.

Forget the full price. Insurance covered most.
If written off, insurance company should pay the replacement value of the bike, not declared value with MTO.
Since there are no blue book values for motorcycles, you will likely have to show the insurance company some ads with similar bikes, to get a fair pay out.
My friend used to work here... the make all kinds of springs.
Give them a shout, they might be able to lead you in the right direction.

Do you have pictures of the damage?
New oil leaks? Any dents in tank? Bent handle bar? Misaligned or bent forks? Cracked fairings?
From what you have said so far, I'd be inclined to go through insurance in this case.
Start printing ads for similiar bikes just in case there is enough damage...
