Depending on where you are, with an ATV you can possibly ride on the shoulder of a highway, as long as the rider and vehicle meet specific criteria (including insurance). More below.

Will I require the off-road insurance prior to going to Service Ontario to register the bike and get the plates? Or can I get the insurance after?
I was driving the DVP Southbound at 9:45pm. Just below Danforth, a SS riding the narrow right-hand shoulder going NORTHBOUND! About 10 seconds later, two police with lights on, traveling in the northbound lanes seemed to be in pursuit. Hope you are not roadkill!
How about team head to head action? Each team has three riders. First rider completes the short course, when rider get to the finish line, the next rider goes...

Hmmm... I figured that I would be in/around the tongue weight. Seems the hitch mounted carriers are heavier than I thought.
I guess the foldable trailer or trailer-in-a-bag will be the next best thing. Now I just have to find one in good condition at a reasonable price.
