If that's the case I would suspect that engine oil is not the problem. Are you checking the oil level with the bike balanced upright? Will the bike start/run now? Do you recall if the bike was overheating when it stalled out? I wonder if your fuel pump is causing the issue (just a hunch...

Which event took place first? Did the bike stall, followed by the engine oil light coming on, or did you notice the engine oil light prior to the bike stalling? IIRC the engine oil light will remain illuminated so long as the bike is NOT running (ie no oil pressure). When the bike did stall...

There's more to consider than just "rider sag". What are your measurements for "free sag" and "stiction"? If you don't know then you didn't properly set your sag and you're only scratching the surface. You should also consider both front and rear ride height/geometry changes, if applicable.
