I ride a 2004 z750 and like it so much I may even go for a z1000 when I'm ready to get a new bike. Reliable as hell and easy to maintain. I highly suggest a corbin seat though, and I put bar risers on for $100 that make it rideable all day.

These mileages to a tank are interesting.. the guy at the dealer told me I could be getting 250-300k on a tank. Seems impossible based on the numbers I'm seeing here, am I missing something or was he just really trying to sell me the bike?
