In my opinion the key to a good motorcycle camera is that it needs to be set it and forget it. You wire it into a switched power source on your bike and it automatically turns on when you start your bike, turns off when you stop the bike, and you never need to remember to do anything. I used to use an action camera way back, the kind with an on/off switch, and the problem with those is sometimes you forget to turn it on.
The camera I have now is called "blueskysea b1m", it was just over $100 on aliexpress. It doesn't seem to be available anymore, but here's one on amazon that is very similar at has good reviews:

I used to recommend people spend more money on higher quality cameras, but these days even the cheap ones seem good enough. Mine is clear enough to capture the licence plate of a car in front or behind me, which is all I need.
It comes in several pieces, the main piece sits under your seat and it's where you put the memory card, you wire it into a switched power source. Then there are two cameras you attach with a long wire, one is mounted somewhere near the front of your bike facing forward, and another one I mounted to my rear licence plate holder. There's also a controller with some buttons on it, but I didn't bother hooking it up, I find it useless, all I need the camera to do is record and it does that without any input. There is also an app so that you can wirelessly transfer videos to your phone, but I find it easier to just take out the micro sd card and pop it into my laptop if I wanna access the videos, but I guess if I was on the road when I needed to access the video I wouldn't have my laptop so I'd use the wireless function.
